Campfire ???
An easy, low mess, all in one dish meal that allows you to sit at the campfire as it cooks.
I use large baking tins from Dollar Tree or Amazon for lots of my campfire cooking. They are very lightweight and cheap enough to be disposable so there is little to clean up afterwards which is another bonus! Just click the image to link to Amazon
Ingredients:
2 Cups Pre-cooked Rice (I use a frozen Trader Joes Brown Rice Pack)
Taco seasoning
1 lb chicken breasts, chopped
1 green pepper, sliced
1 red pepper, sliced
1/2 onion, sliced
1/2 cup salsa (I often throw in most of the jar)
cheese optional
Tortillas

Tortillas
We eat lots of veggies on the road..... We use them as snacks, throw them in breakfast, and most dinners involve them. So after shopping I slice the peppers up and keep them in bags. It allows for quick snacking anytime, and also for quick meal prep at breakfast and dinner. It also saves fridge space and prevents the peppers from getting smashed if your fridge or cooler is full. The pre-chopped peppers really come in handy for this dish!
Fajitas Prep:
1. Prepare your chopped peppers & onions.
2. Chop your uncooked chicken into slices or bite sized pieces.
3. Spray your tin with cooking spray.
4. Place Rice on the bottom
5. Layer in Chicken, Peppers, & Onions.
6. Sprinkle Taco Seasoning on the top.
7. Pour Salsa over the entire dish.
8. Cover with foil.
9. Place entire tin over the campfire, on a grill, or in the oven.
10. Cook for 30-45 minutes until chicken and veggies are cooked, stirring occasionally.
11. When ready wrap tortillas in foil and place over fire to warm.
12. Serve and enjoy!
